It is possible to stop the aging of a ticket. You will need to define the work hours for the operation in the Sysconfig. Some helpful advice, if your workday ends at 5pm, select 4pm. The system interprets 4 as 4:01pm up to 4:59pm.

Depending on the number of articles per ticket and the number of tickets per day, your DB size can vary. Our DB is currently around 600 MB in size and contains over 40k tickets. You'll need to verify the path of whatever utility is running, be it mysqldump.exe or 7z.exe

If you use the Uninstall program that comes with OTRS, it will wipe the program off of the machine (including DB and file storage). You can reboot and the install the new version if you are not planning to keep any of the prior data.

You should be able to keep all the data, but you will want to have the proper backups. You will then need to install the new version and run some DB upgrade scripts to bring your 3.0 DB up to 3.1 specs.
