You mean the Agent::PendingReminder at the http://server/otrs/index.pl?Action=AdminNotification ? These are in the table NOTIFICATIONS

No, just the table which contain the value of the date when i set the state of the ticket to pending reminder.
Where is stored the date ? In which table ?

After pocking me with pms, I had another look into the ticket table. The column until_time seems to save the pending date in unix time.

Nope, it's an other field

Why? For me that column changed after I did nothing but setting a pending reminder.
