I've created a process workflow, how do I add a field (dynamic field ?) that displays the who created the ticket, i.e. their name.
This information is available on the right hand side, under Customer Information with a tag called 'Customer' - how can I reference this in the actual main body of the process ticket?

There is a setting in SysConfig, DynamicFieldFromCustomerUser::Mapping and Ticket::EventModulePost###930-DynamicFieldFromCustomerUser. I believe this should have the functionality you're looking for.
