Can I change this Fields? Want to show here email address from sender, not a name.

No, why should you need the mail address? For replying use OTRS

I need the email address to copy it and search through my customer base. it sounds amazing that you can not customize this simple thing/fields.

nobody else needs this. We do all our contact on a ticket through OTRS.
OTRS 6.0.x (private/testing/public) on Linux with MySQL database.

OTRS will search trough customer database automatically and asign the ticket to the customer contact

Unfortunately, my customer base is not connected with OTRS (because the Rules on our site/service does not allow us).
