Hello,
how can I associate a Owner to a Service ? Like I do with a ConfigItem and a Customer through "edit".
Same question for the Attachment to a Service.

You can't. Services are what customers need support with. Queues are what [groups of] agent can handle categories of tickets.
Attachments don't belong to Services, but they may be part of items.
