When sending auto replies to new tickets and when adding new articles on existing tickets, the emails are sent as plaint text.
When using the ticket notification feature to automatically send emails when certain criteria are met, the emails are sent as html.
I would like to send all emails as plain text.
1. How can I change the notification emails to only go out as plain text?
2. If that setting does not exist, where do I go to change the markup for the notification templates?

For a new template create a copy of Unformatted.tt in Kernel/Output/HTML/Templates/Standard/NotificationEvent/Email/ with a custom name. And take care that only Subject and Body are possible placeholders. Everything else needs to be done in the template.
