I would like to know if it is possible to upgrade from OTRS CE 6.0.30 to the latest version of Znuny.
If yes, how to can I do it without losing data?

Yes this is possible. Follow the step on the documentation (https://doc.znuny.org). Your need to upgrade all steps: 6.0 => 6.1 => 6.2 => 6.3 => 6.4 => 6.5 etc.
Most important: Test it first, do not start right away with your production!
