Issue with Process Managment configuration

We have followed the example setup provided in the admin manual and demonstrated in the webinar on Youtube(links provided below) to setup the bookstore ticket process, but we are having an issue with "ticket read out".

Everything about the ticket flow works except being able to tell what each step has as an input value (Currently using the ticket history view to see what each ticket has but that is ineffective for anything more than testing). That being said our first question is what are these areas called so that we can try and configure them properly?

To clarify what we are referencing we have attached notated screenshots .

what did you mean by configure sysconfig? and how can I do that?
