I upgraded from 3.8 to 3.10 and since I did the update every time I load the OTRS mail automatically.
How do I disable the automatic loading of mail in OTRS?

that's handeled via the cronjobs
have a look in <OTRS_HOME>/var/cron/
after changing settings here, don't forget to load the new crontab
