Is there a way to add customers from the app its self, like if I meet a new customer in the field? Or need to edit their existing data?

no, not at the moment. But you could open an enhancement bug
"Production": OTRS™ 8, OTRS™ 7, STORM powered by OTRS
"Testing": ((OTRS Community Edition)) and git Master
