What option do I have to set to keep email from creating tickets? I have mail messages coming into OTRS and creating multiple tickets.

You mean spam?
Create a post-master filter so that all mails from that address are sent to the junk queue (as I understand that sets the x-spam-flag to yes and won't create a ticket).

Actually they were apparently error messages returned from a mailer-daemon. But I think your answer will work fine for this also.

(quite) some time ago crythias suggested a way to let OTRS accept incoming e-mails from registered customers only.

I remember it worked but there were some annoyng error messages left in the log... I did not test it thoroughly, tho.
You may found his customisation useful, I think.
